Delicious Tailgating Chicken Salad Recipe That Everyone Will Love

I know everyone is always looking for something different to take with you when you are tailgating. We have found the perfect Tailgating Smoked Spatchcock Chicken Salad Recipe that is sure to please a hungry group.

Here is an easy and delicious tailgating chicken salad recipe:

  • 1 Smoked Chicken De-boned and chopped
  • 2 Celery Stalks Chopped
  • 1/2 Green Apple Chopped
  • 2 Tablespoons of Green Onion
  • 3 Tablespoons of Sour Cream
  • 3 Tablespoons of Mayo

No one every wants to bring the same boring food to a party, tailgating or just a family get together. This recipe will have everyone wanting more!

What is Tailgating?

No, I do not mean following someone too closely in your car or truck. I’m talking about when a group of people get together typically in a parking lot of a sports stadium or in a designated area to eat and have fun with friends and family.  According to the American Tailgaters Association, tailgating did not start in a parking lot of a football stadium.  In fact it started in mid-summer of 1861 at the First Battle of Bull Run.  The story goes that civilians arrived at the battlefield in wagons loaded with wines, whiskeys, and food to watch the battle between the Union Army and the Confederate Army.

Being from Mississippi, I think we know a thing or two about tailgating.  Whether we are tailgating in The Junction at Mississippi State University, The Grove at the University of Mississippi, or tailgating at the University of Southern Mississippi, it is all about fun, family, food and football.

What is Spatchcock Chicken?

A spatchcock or spatchcocked chicken is a chicken with the backbone removed and cut so that it will lay flat. This allows the chicken to be spread out or opened up like a book, which makes it cook more quickly and evenly according to culinarylore.com.  A spatchcock chicken can be grilled, baked, or even smoked.

In our link below we show you step by step directions on how to spatchcock a chicken.  I know it sounds hard, difficult and confusing, but it is not after you do it the first time.  All you need is a pair of poultry shears and a sharp knife.  First you find the neck of the chicken, next you want to find the chicken’s backbone, and then you take the poultry shears and cut down the right side of the backbone, next you cut down the left side of the backbone and remove it.  Finally you look for the white cartilage in the center of the breastbone, take your sharp knife and cut a small slit about a ¼ inch deep.  This will allow the chicken to lay flat when you turn it over.    

Why do you Spatchcock a Chicken?

We spatchcock the chicken which means we cut the backbone to open up the chicken to make it flat.  This technique has been around since the 17th Century.  It allows the chicken to cook more evenly, crispier skin, and faster cook time. 

What is the purpose of smoking meat?

According to Wikipedia, smoking is the process of flavoring, browning, cooking, or preserving food by exposing it to smoke from burning or smoldering material, most often wood. Meat, fish, and cheese are the most popular for smoking.

How do we smoke meat?

Smoking can be done in four ways: cold smoking, warm smoking, hot smoking, and through the employment of “liquid smoke”. However, these methods of imparting smoke only affect the food surface, and are unable to preserve food; thus, smoking is paired with other microbial, such as chilling and packaging, to extend food shelf-life according to Wikipedia.

How chicken salad started.

Wikipedia states the following, Chicken salad is any salad with chicken as a main ingredient. Other common ingredients may include mayonnaise, hard-boiled egg, celery, onion, pepper, pickles or picle relish and a variety of mustards. Typically it is made with leftover or canned chicken.  One of the first American forms of chicken salad was served by Town Meats in Wakefield, Rhode Island, in 1863. The original owner, Liam Gray, mixed his leftover chicken with mayonnaise, tarragon, and grapes. This became such a popular item that the meat market was converted to a delicatessen.

What is injecting meat and why do you do it?

Injecting meat is the process of putting your marinade or seasonings deep into the meat for better flavor and a juicy texture. 

Mop Sauce Recipe:

  • 8 oz of water
  • 1/4 cup Italian Dressing
  • 2 oz of your favorite BBQ sauce
  • 1 tablespoon of Apple Cider Vinegar
  • 1/8 cup of your favorite rub (our recipe is listed below)

Injection Recipe:

  • 1 Stick butter (melted)
  • 4 Cloves of Garlic
  • 2 Tablespoons of Green Onion Tops
  • 4 Tablespoons of Italian Dressing
  • 1/2 Lemon Squeezed
  • 1/2 cup of water
  • 1 Teaspoon of Vinegar
  • 1 Tablespoon of Rub

Rub Recipe:

  • 2/3 cup packed dark brown sugar
  • 2/3 cup salt
  • 2/3 cup pepper
  • 1/3 cup paprika
  • 1 tablespoon celery salt
  • 1 tablespoon garlic powder
  • 2 teaspoons ground mustard
  • 2 1/2 teaspoons ginger powder
  • 1/4 teaspoon chicken powder
  • 1/2 teaspoon Ancho Chile Pepper
  • 1/3 cup granulated sugar
