One of my favorite Easy Dump recipes is Red Beans with Sausage cooked in the Fissler Souspreme Multi Pot. I chop all the ingredients, dump them all in at the same time and set the Fissler Multi Pot and 4 hours later I have a hot meal ready for the entire family to eat. With our busy schedule I’m always looking for easy, fast, and delicious meals for my family and the Fissler Multi Pot has helped with that.

What is a Dump Recipe?

A dump recipe is when you prepare everything ahead of time, or right before you want to cook and dump in a slow cooker or pressure cooker. Most people will prepare several meals in advance. They freeze all the ingredients until they are ready to cook the meal, finally dump the ingredients in the slow cooker or pressure cooker and then dinner is served.

Dried Beans vs Canned Beans

I personally prefer the dried beans when making Red Beans with Sausage over the canned beans. I get to season the dried beans the way I want them and they do not have a canned metallic taste. The canned beans can also become too soft and mushy when cooking them in a slow or pressure cooker.

To Soak or Not to Soak Red Beans?

I normally do not soak my Red Beans before I cook them, because I am cooking them in a slow cooker or pressure cooker. But here are some reason why people soak them first. Soaking Red Beans before you cook them can speed up the process. It can also remove the sugars that irritate your digestive tracts. Some people even add salt to their soaking water to help them cook more quickly. There is no right or wrong way here. It is just more about time and preference.

Quick Soak vs Overnight Soak

What does it mean to quick soak your Red Beans? Quick soak simply means you place the washed and sorted beans in a boiler with about 2 inches of water covering the beans. You bring them to a rolling boil for about 2 mins, remove from heat and set covered for about 1-4 hours. Overnight Soak simply means that you place washed and sorted beans in a bowl covered by 2 inches of water with 1 tablespoon of Kosher Salt and let sit for 4-12 hours.

Why do I use Chicken Broth instead of water?

I like to use Chicken Broth instead of water because it adds more flavor. Between the Country Pleasin sausage and the Chicken Broth, the dried Red Beans gets tons of flavor without the over powering seasoning taste. This is just what my family prefers and your family my prefer more.

Slow Cooker vs Pressure Cooker

Here are some difference between a slow cooker and a pressure cooker. A slow cooker cooks slow and usually takes anywhere between 6 – 8 hours. Most people that use a slow cooker put all the ingredients in it before they leave for work and when they get home it is done. I was reading a blog post the other day that says most organized people use a slow cooker. I’m not sure I agree with that. I consider myself a very organized person and used a slow cooker for years until I discovered the pressure cooker. A pressure cooker does cook faster, but to me the flavor is so much better. In the past when I have cooked soups, gumbo, red beans with sausage, or taco soup in a slow cooker they are good, but they are always better the next day. With the pressure cooker, I do not have to wait for them to taste even better the next day. When they are cooked in the pressure cooker, the food tastes like it has been sitting over night.

Can cooked Red Beans and Sausage be frozen?

Yes, Red Beans and Sausage can be frozen after it has been cooker. I would not recommend mixing the rice in with the Red Beans and Sausage. I accidentally did that once and the rice did not freeze well. Usually when I make a batch of Red Beans with Sausage it makes enough for two meals. After dinner, I take the leftovers and put them in a gallon freezer bag. This make a quick and easy dinner for another day.

What do you serve with Red Beans and Sausage?

Typically Red Beans with Sausage is served over a bed of rice. We use brown rice in our house, but you can use your favorite rice. Sometime it is served with cornbread or garlic bread.

Are Red Beans and Kidney Beans the same thing?

Red Beans and Kidney Beans are not the same, they are actually two different types of beans. Red Beans are smaller and rounder were Kidney Beans are bigger and shaped like a human kidney. Red Beans and Kidney Beans can be used interchangeably in recipes. Red Beans are usually used for Red Beans with Sausage were Kidney beans are used more in soups and chili.

What is the difference between Dark and Light Red Beans?

Dark Red Beans tend to have a thicker dark red skin were the light Red beans have a thinner and more delicate skin.

The History of Red Beans and Rice

Here is the history of Red Beans and Rice according to Wikipedia, “Red beans and rice is an emblematic dish of Louisiana Creole cuisine (not originally of Cajun cuisine) traditionally made on Mondays with red beans, vegetables (bell pepper, onion, and celery), spices (thyme, cayenne pepper, and bay leaf) and pork bones as left over from Sunday dinner, cooked together slowly in a pot and served over rice. Meats such as ham, sausage (most commonly andouille and Chaurice), and tasso ham are also frequently used in the dish. The dish is customary – ham was traditionally a Sunday meal and Monday was washday. A pot of beans could sit on the stove and simmer while the women were busy scrubbing clothes. The dish is now fairly common throughout the Southeast. Similar dishes are common in Latin American cuisine, including moros y cristianos and gallo pinto.

Red beans and rice is one of the few New Orleans style dishes to be commonly served both in people’s homes and in restaurants. Many neighborhood restaurants and even schools continue to serve it as a Monday lunch or dinner special, usually with a side order of cornbread and either smoked sausage or a pork chop. While Monday washdays are largely a thing of the past, red beans remain a staple for large gatherings such as Super Bowl and Mardi Gras parties. Indeed, red beans and rice is very much part of the New Orleans identity. New Orleanian Louis Armstrong’s favorite food was red beans and rice – the musician would sign letters “Red Beans and Ricely Yours, Louis Armstrong”. And in 1965, the R&B instrumental group Booker T. & the M.G.’s wrote and recorded a song titled “Red Beans and Rice” that was originally a B-side but later became popular in its own right.

The vegetarian dish Rajma chawal is very similar (which translates literally to red beans and rice), popular in North India. Red beans and rice is also a dietary staple in Central America, where it is known as “arroz con habichuelas”. The dish is popular in Cuban, Puerto Rican, Dominican, Haitian and Jamaican cuisine as well.”
